WHEY PROTEIN CONCENTRATE (WPC)

Whey protein concentrate (WPC) is derived from fresh whey, a by-product of cheese production. Through filtration processes, most of the non-protein components (such as lactose, fat, and minerals) are removed to produce a powder with protein concentrations ranging from 30% to 80%, depending on the desired application.

Applications:
Lower-percentage WPC’s with protein levels around 30% are often used as a cost-effective replacement for skimmed milk powder. The main applications are: ice cream, bakery products, yogurt, chocolate and confectionery.

Higher-percentage WPCs with protein levels around 80% are mainly used in sports nutrition, protein-enriched food/beverages and health or dietary products.

Shelf life:
Whey protein concentrate has a very long shelf life of approx. 18-24 months from date of manufacture. It should be stored in a cool, dark and dry place (preferably below 20˚C).

WHEY PROTEIN ISOLATE (WPI)

Whey protein isolate (WPI) is produced by further refining whey protein concentrate. Starting with high-quality WPC, the product undergoes additional purification steps to remove nearly all remaining non-protein components, such as fat and lactose. This results in a highly purified powder with a protein content of 90% or higher. WPI is a very pure ingredient having an excellent digestibility, therefore a preferred ingredient in sports nutrition, medical foods and other high-performance dietary applications.

We also offer a CLEAR whey protein isolate, specially formulated with a low pH, making it ideal for pairing with innovative, fruit-based flavours. Milk protein concentrate (MPC) is a spray dried product, manufactured by ultra-filtration of fresh skimmed cow’s milk. The protein content of MPC varies from 50% up to 85%. MPC is a high-quality dairy ingredient that contains both casein and whey proteins in the same natural ratio as found in milk.

Milk protein concentrates are widely used for their numerous properties, such as: gelation, browning, emulsifying, foaming, high-fat and water binding capacity, improvement of cheese performance, increasing protein content, good heat stability, high-protein/low lactose ratio, taste preserving and coagulation properties etc.

Applications:
